Ingredients:
1 pound (450g) large prawns
2 cups of watermelon, cubed
1/2 cup crumbled feta cheese
1/4 cup Kalamata olives, pitted and halved
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
Salt and pepper to taste
Fresh mint leaves for garnish
Fresh basil leaves for garnish
Fresh cilantro leaves for garnish
4 cups mixed lettuce leaves
2 shallots, thinly sliced
Instructions:
Preheat the grill to medium-high heat.
In a bowl, combine the prawns, olive oil, lemon juice, salt, and pepper. Toss to coat the prawns evenly.
